baked greek chicken

Greek flavors speak to me.  I have no part Greek in my blood. Like, 0%, literally.  The saltiness of the olives and the flavors of the spice, they just combine so nicely. If you don't have artichoke, you can leave it out as it doesn't change the flavor much. 

Ingredients: 

  • 1 lb chicken tenders
  • 1 medium onion cut into strips
  • 1 small jar of artichokes (optional) 
  • 1 pint of tomatoes
  • 1/2 cup pitted kalamata olives
  • 1/4 cup capers, rinsed and drained
  • 1 tsp ground oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic
  • 1 tbsp olive oil or more as needed


Directions: 

  • Heat oven to 350
  • Mix spices in a small bowl
  • Sprinkle each side of the chicken and set aside
  • Get your baking dish that you will cook in, put a little olive oil in the bottom- enough to cover the bottom lightly
  • Cut your onions and spread them all over the bottom of the baking dish
  • Place the seasoned chicken on top of the onions, do not overlap
  • Spread all the olives, capers, tomatoes and artichokes throughout the dish
  • Bake for about 45 minutes or until chicken is cooked
