Buttermilk Fried Chicken

Boy oh boy we love our fried chicken down here in the South.  There are so many places you can go and get the best chicken, but sometimes you may want to just stay at home and make it yourself!  Frying chicken can be intimidating.  It took me a while to master cutting a chicken.  I've got that down, finally.  Then it takes a while to learn how hot to get your grease and when to turn it down, and then finally... The sound of your chicken being "done".  It is a sound you will learn and will know when to pull the chicken out. It's a bit of work and can make a little mess, but in the end it will make your whole family happy. 


Ingredients: 

  • 4.5 lb whole chicken, cut into pieces 

  • Buttermilk (enough to cover your chicken in the bowl you will soak it in) 

  • 2 tbsp slap ya mama cajun seasoning 


Batter: 

  • 4 cups of flour

  • 3 tbsp slap ya mama cajun seasoning

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • 1 tsp salt

  • 1 tsp pepper 


Directions: 

  • Cut your chicken into pieces

  • Place in bowl and cover it with buttermilk

  • Sprinkle in 2 tbp slap ya mama cajun seasoning

  • Mix it around and soak it for at least 2 hours 

  • Mix up the batter

  • Heat oil in a large dutch oven, cast iron or pot deep enough to fry your chicken 

  • Get the oil up to 350

  • Fry until golden and done (Check with meat thermometer) 

  • I like to flip mine often- I think this helps it from getting too dark or burning
