chorizo potato quiche

  • 1 whole unbaked pie crust (deep dish) 
  • 1/2 cup onion diced 
  • 1 lb chorizo 
  • 1.5 cups diced potatoes (little cubes, about 1/4 inch) 
  • 1/2 tsp salt 
  • 1.5 cup heavy whipping cream 
  • 8 large eggs 
  • 2 cups shredded cheddar cheese
  • 1/4 cup green onions 


  • Preheat oven to 400 
  • Defrost pie shell 
  • Dice your onions and potatoes and set aside 
  • In a skillet, cook down your chorizo while breaking it up like ground meat 
  • Add onion and sauté down for a minute 
  • Add the potatoes and stir around
  • Cook down for about 5-10 minutes 
  • In your pie pan, lay the chorizo mixture on the bottom 
  • Pour the cheese on top 
  • Break your 8 eggs in a large bowl and mix them very well 
  • Mix in green onions with the eggs 
  • Pour eggs on top of chorizo and cheese mixture 
  • Place in the oven and cook for about 40 minutes until eggs set
