grillades and grits

Oh my! If you do not live in New Orleans and want to taste a little bit of it, this is the dish for you. It is so full of flavor. Tender meat, sauce full of all these flavors and spices, and over grits... a southern staple.
Doesn't get much better than this!
Ingredients:
- Canola oil for frying
- 6-8 flattened round steaks
- 1 cup flour
- 3 tbsp slap ya mama cajun seasoning
- sauce:
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced and seeded green bell pepper
- 2 tbsp flour
- 1 can 14oz diced tomatoes
- 2 cups beef broth
- 2 tbsp dry red wine
- 1 tsp slap ya mama cajun seasoning
- 1/4 tsp ground thyme
- 1/4 tsp ground oregano
- 1/4 tsp basil
- 2 tsp garlic powder
- 4 bay leaves
Directions:
- First, fry the rounds steaks
- Heat the pan with canola oil (enough to coat the bottom)
- Mix 1 cup flour with 3 tbsp slap ya mama cajun seasoning
- Batter each side of the round steaks and place into hot oil
- Fry each side until golden
- Remove steaks from the pan and set aside
- Place onions, celery, bell peppers into hot oil
- Cook down until soft
- Add 2 tbsp flour to coat the vegetables
- Add the diced tomatoes
- Add the beef broth and wine
- Cut the round steaks into strips and place back into pan
- Add all other seasonings and allow it to cook down on low
- Cook grits according to package
- Serve over grits
