Grilled Flank steak with sweet and spicy chimichurri sauce

Oh I love Brazilian food.  You know those Brazilian steakhouses? Oh yes, they are amazing.  I don't have a huge fire set up where I can cook my food like that, but I can recreate some sauces to go with my meat! Here I decided to put a little twist on the traditional chimichurri sauce and make it a bit sweeter.  You can bump the heat up if you'd like!

Ingredients:
Rub for Flank Steak: 

  • 3 heaping teaspoons of tony's cajun seasoning 
  • 1 tsp Chili 
  • 1 tsp Cumin 
  • 1 tsp ground oregano 
  • 1 tsp garlic powder  

Directions: 

  • Mix spices together and rub all of your meat 
  • Let rest for about 25 minutes and then grill to desired doneness is reached 

Chimichurri Sauce: 

  • 2 tbsp olive oil 
  • 4 tbsp lime juice 
  • 1/2 tsp salt 
  • 1 tbsp red pepper flakes 
  • 1 tsp cayenne pepper 
  • 1/4-1/2 cup red onion (due to strength of onion, for this recipe I used slightly under 1/2 cup onion for a mild tasting onion) 
  • 1/4 cup packed chopped cilantro 
  • 1/2 cup packed chopped parsley 
  • 1 tbsp balsamic vinegar
  • Blend all together and serve over sliced steak
