oven roasted filet of beef

I love that you can make this fancy or make it for any ole night of the week.  Serve it whole or serve it sliced into thin pieces and make a lovely little sandwich with it! Any way you have it, you're going to love it. 

Ingredients: 
2.5 lbs filet of beef (whole- I usually buy the "Butt End" 
2 tsp crushed rosemary
1 tsp salt
1 tsp pepper
1 tbsp slap ya mama cajun seasoning
Olive oil
Directions: 
Preheat oven to 350
Prepare your roasting pan
Remove rack
Tie up your roast (I spaced out 4 ties, so about every 2.5 inches I made a tie) 
Mix seasoning in a small bowl and sprinkle all over the roast
Pour about 2 tbsp olive oil in the roasting pan
Sear the roast on every side
Place the roasting rack back in the pan
Roast the filet for about 1 hour to reach a medium temp
Use an internal thermometer
Allow it to rest for 20 minutes and then slice to desired size
