A patty melt is just an old school classic burger patty on white bread. 
Growing up, we would call this a hamburger, ha! My parents never really bought hamburger buns unless we had a party.  You better believe you were going to eat a hamburger OR even a hot dog on white bread if that is what was in the house. 
Now, I love these. I don't even really need the onions, but that is part of what makes it the patty melt.  
I don't particularly care for caramelized onions, unless in french onion soup.  So, these aren't done as much for my burgers.  You can definitely change that to your preference. 

Ingredients: (Makes 8 burgers)
2 lbs ground beef
1/2 tsp salt
1 tsp pepper
1 tsp Tony's cajun seasoning
1 tsp worcestershire sauce
American Cheese slices
2 tbsp canola oil

Directions: 
Mix ground beef with all ingredients
Make into thin patties
Heat up oil in pan
Add patties to pan, not overcrowding
Cook until desired temperature is reached
Add slice of cheese on top
Keep the brown bits and grease in pan and sauté down onions until at least soft
Add on top of patties

Toast white bread
Add mayonnaise, ketchup, mustard and assemble patties and onions on the bread
