pecan snowball cookies

I love when simple things can be so yummy!
These little cookies are really popular around here during Christmas, but I love them any time of the year.
We always have tons of pecans down in Louisiana, which is great since that is the only nut my son can tolerate! 

Ingredients: 
1 cup softened butter
3/4 cup powdered sugar
2 tsp vanilla extract
2 1/4 cups flour
1 cup chopped pecans (I do some fine, some rough) 
Powdered sugar for rolling the cookies after baked

Directions: 
Preheat oven to 350
Line a cookie sheet with parchment paper
With a stand or hand mixer, cream butter and sugar together until fluffy and light
Add vanilla
Add the flour and mix until combined
On low, mix in the pecans
Scrape the bowl and make sure it is all mixed well
Using a scooper or measuring spoon, roll the dough into approximately 2 tbsp sized dough balls
Place them on your cookie sheet
Put them in the fridge for about 30-45 minutes
Bake cookies for 15-18 minutes until golden
Place on a cooling rack
Roll them in powdered sugar and set on rack
