Shrimp, Tomato, and Asparagus Sheet Pan Dinner

There are plenty of nights where an easy dinner is required.  This is so easy to put together and quick to cook. There is a pleasant surprise when you bite into the baked cherry tomatoes!

With this dinner,  I can go enjoy my son's ballgame without stressing over what are we going to have when we get home.  No need to pick up fast food on a busy night, and that makes this mom very happy! 


Ingredients: 

  • 2lbs of peeled and deveined shrimp 

  • 1.5lbs of asparagus 

  • 1 pint of cherry tomatoes 

  • 20 cloves of garlic 

  • 1 tbsp slap ya mama cajun seasoning

  • 1 tsp zatarains blackened pepper seasoning 

  • Salt and Pepper to taste

  • 1/2 tsp ground thyme

  • 1/2 tsp paprika

  • 1/2 tsp Emerils essence seasoning 

  • Olive Oil

  • Optional: Squeeze lemon juice over top 


Directions: 

  • After you chop off and discard the bottom 3 inches of the asparagus(stalky part), chop them into to 2-3inch sticks 

  • Place them in a large bowl 

  • Place the cherry tomatoes (washed) with the asparagus 

  • Cover them liberally with Olive Oil

  • Add the cloves of garlic, chopped 

  • Toss them around and then throw on the cookie sheet 

  • You should still have some oil an garlic in your bowl, leave it and put your shrimp in there 

  • Toss around with all the seasonings and then place on the cookie sheet as well

  • Sprinkle the asparagus with salt and pepper

  • Cook on 400 for about 20 minutes, your shrimp should be done and your asparagus will be tender
