spinach, mushroom and Zucchini frittata

I love a frittata. To me, it is such a great breakfast. You can basically throw anything in the fridge into it. Veggies are my favorite in a frittata, because well, you hardly even know you're eating a vegetable- so why not! 


Ingredients: 

  • 12 eggs 
  • 2-3 cups of spinach 
  • 1 cup diced zucchini 
  • 1 cup sliced mushrooms 
  • 1 cup shredded cheddar 
  • 1/2 cup diced onions 
  • 1/4 cup diced green bell pepper 
  • 1/2 tsp salt 
  • 1/2 tsp pepper 
  • 1/2 stick butter 
  • 1 tsp slap ya mama cajun seasoning 


Directions: 

  • Heat oven to 350 
  • In a large bowl beat eggs and set aside 
  • Melt 1/2 stick butter in a pan 
  • Add diced onions and diced bell peppers and sauté down until soft 
  • Add mushrooms and zucchini, cook down 
  • Add spinach and cook until wilted 
  • Add seasonings 
  • Mix cheese into eggs and pour on top of veggies in the skillet 
  • Stir around a bit to mix it 
  • Cook in oven for about 30 minutes or until it is done
