SPINACH PIE

Have y'all heard of spinach pie? 
The first time I ever heard of it was when I met my husband. His mom made it, he loved it, I thought it was the weirdest thing ever.
I wasn't very adventurous, nor did I know much about food back then. I mean, I didn't even really know what the heck cream cheese was. I have come a very long way!
So, When I tried this "pie" the first time, I thought it was weird, maybe a little good, but I was sure I didn't want to eat it again. I did promise my husband I would make it for him though.
Throughout making this for him, I changed up the recipe and adapted it to be more of something I might would like too, and now I love it! 

 

Spinach pie

Makes 1 pie 

1 pie shell 

1 pack of frozen spinach chopped

1/2 pound of cajun sausage 

8oz cream cheese

1 egg

1/2 cup parmesan  cheese

8oz ricotta cheese

 

  • Turn oven on 375

  • Brown sausage in a skillet, if you like it spicy, you can still add some cajun seasoning in it, just taste to adjust flavor

  • Drain spinach and add it to the sausage, taste again to adjust flavor

  • Beat eggs and cream cheese

  • Add the parmesan cheese and ricotta 

  • After the sausage/spinach mix has cooled down, add to cheese mixture and mix. 

  • Add to the pie shell and bake for 35-40 minutes until browned on top
