gentilly style cake

Good gosh oh golly, I remember the first time I ate a Chantilly cake from Whole Foods. It was pure something. And although these are still different, they are so lovely. I use an icing that is the same as the traditional cake and just a simple white box cake mix. Simple, quick fix for a yummy treat!

White cake mix
1 tsp vanilla
Mix cake mix according to the box but add 1 tsp of vanilla extract
Berry Mixture:
1/2 cup blue berries
1/2 cup strawberries
1/2 cup blackberries
1 tbsp sugar
1 tbsp apricot jam
Mix this mixture and allow it to sit
These can be made into cupcakes, or above like I did in a brownie tin.
I like the brownie tin purely because its a square and I think it’s cute! Use whatever you want.
Icing:
1/2 cup sugar
32 oz heavy cream
1 tsp vanilla
8 oz mascarpone cheese
Beat heavy cream with 1/2 cup sugar until fluffy whipped cream is formed- set aside
Beat mascarpone and vanilla until soft
Fold mascarpone and whipped cream together

Putting it together:
Take the little cakes and carefully place berry mixture on top
Put the icing carefully over the berries and cover
Decorate with one of each berry
