lemon herb pearl couscous with pure flavor gourmet mini cucumbers

I teamed up this month again with Pure Flavor® to bring you a light dish that is full of summers bounty!
Pure Flavor® sent over their mini gourmet cucumbers this month. They were so refreshing, crisp and oh so tasty! I loved not only making this dish, but having a healthy snack on hand for kids and myself.
Are you in need of something super quick on the weeknight that is healthy? This dish brings it all! It is light, vibrant in not only colors but in flavors as well.
What I love most about Pure Flavor is their standards. They pick right at peak time to bring you the best tasting products as if you went right to the farm and picked it yourself.
You can make this as a side dish (serve them with some kebabs, yum!), or make it as a main dish just like it is, or add a protein to go with it.  

 

INGREDIENTS:  

2 cups cooked pearl couscous

1 dry pint Pure Flavor® Juno® Bites Red Grape Tomatoes, halved

2 cups diced Pure Flavor® mini gourmet cucumbers

1/4 cup Olive Oil

1/2 cup chopped parsley

1 tsp grated garlic

1 tsp chopped mint

1 tsp chopped basil

Juice of 2 lemons (about 4 tbsp)

1/2 cup diced red onions

 

DIRECTIONS: highlight steps to create recipe

 

1. Cook pearl couscous according to directions

2. Chop and prepare ingredients

a. Chop herbs

b. Chop onions

c. Grate garlic

d. Chop tomatoes

e. Chop cucumbers

3. Make vinaigrette

a. Olive oil

b. Herbs

c. Lemon juice

d. Red onion

4. In a large bowl, add the cooled couscous, vinaigrette, chopped cucumbers, chopped tomatoes and toss gently but well

5. Serve!
