Sweet Potato Bisque

One of our favorite soups.  It's simple, elegant, and makes for a warm tummy on a cool night. 


  • 12 cups diced sweet potatoes 

  • 2 tbsp butter 

  • 1 1/4 cup celery diced  

  • 1 1/2 cup onion diced 

  • 6 cloves of garlic chopped 

  • 1tsp Tony's creole seasoning 

  • 1 1/2 tsp Emeril's Essence seasoning 

  • 1/4 tsp thyme 

  • 2- 32oz chicken broth 

  • Salt and pepper to taste 

  • 1 pint of heavy cream 


  • In a large stock pot melt your butter 

  • Add the onions and celery and sweat down for a few minutes

  • Add garlic 

  • Add sweet potatoes, seasoning, and broth and bring to a boil

  • Blend up with an immersion blender 

  • Add heavy cream and let it cook down 

  • Adjust seasonings to your taste and enjoy!
