no beef veggie soup


Alright, so I know what you’re probably thinking… because, well, I’d be thinking it too. Where’s the beef? Why no beef when you want beef veggie soup. Here’s the thing. I’m a little weird… When I think of veggie soup, I don’t want beef hanging out in there. However, what I do want is flavor. So… there’s that.
I know beef bouillon can be looked down upon, but it brings the flavor without shreds of beef floating around in my veggie soup! And not only that, it cuts the time so much and makes it that much easier to throw together in a jiffy!

2 lbs mix veggie bag (frozen)- green beans, peas, corn, carrots
2 cans lima beans (15 oz) I like the can over frozen
1 potato cubed small
16-22 cups water
12-13 beef bouillon cubes
3 14.5 oz diced tomatoes
