broccoli and cheese soup

I am pretty sure if you follow my recipes you've heard me talk about our love for broccoli.  This is a classic soup that our whole family loves!
It is so creamy and filling. There is nothing fancy and it's easy to make in a jiffy on the stovetop. 


  • 2 lbs fresh broccoli florets 
  • 2 medium onions 
  • 2.5 cups carrots- cut into coins 
  • 2- 32oz Chicken broth (8 cups) 
  • 2 cans cream of celery (or make your own)
  • 1 lb velveeta cheese 
  • 2 cups cheddar cheese 
  • 1 tsp salt 
  • 1 tsp pepper 
  • 1 tbsp canola oil 
  • heavy cream 


  • Heat up oil in pot 
  • Add onions and sauté down 
  • Add carrots and cook down 
  • Add broccoli and chicken broth 
  • Let it boil until broccoli is tender and falling apart 
  • Add all other ingredients 
  • Let cheese melt and stir it
  • If you don't like it chunky, you may want to use an immersion blender and blend it up a little  
  • If you'd like it a little creamier, add heavy cream and let it simmer for a bit 
  • Adjust any seasonings
  • Serve! 
  • **If you don't want any processed products in your food, I understand.  You can make your own cream of celery, and you can use any kind of cheese you want- it does not have to be velveeta.  I went many years refusing to use velveeta and only recently have given in.  It just is a texture thing.  Velveeta makes it really creamy and smooth.  If you use shredded cheeses, the texture just seems off to me.  Adapt it to your style!
