Oh man, poboys... poboys go with New Orleans like peanut butter goes with jelly. We love them, and we love spice. So naturally some smart person down here decided to put hot sausage on poboy bread! You'll eat this and start waving your hands while shouting, "Throw me something mister." Okay. Maybe not. But, it might make you shout something!

  • 2 lbs sausage- hot sausage and mild (I use Double D for this) Cut to 4" in length and then halved down the middle longways
  • Shredded lettuce
  • Mayonnaise
  • Tomato sliced
  • 1 small onion (optional)
  • Pickles (Optional)
  • Loaf of french bread or poboy bread

  • Cut your sausage up as stated above
  • Heat a heavy bottom skillet or dutch oven
  • Brown the sausage, but don't over cook it
  • Set to the side
  • Prepare your bread
  • Cut french bread into desired size
  • Spread mayonnaise on each side
  • Place sausage on bottom part
  • Place lettuce, tomato, pickle and onion on top
  • Close the sandwich and enjoy!
