Pesto Portobello Panini

This is one of my favorite sandwiches to make! When we used to go to this local pizza shop, this was my favorite meal to get. It is light with onions and bell peppers, and my favorite mushroom.

Ingredients: Makes about 6-8 panini's 

  • Ciabatta Rolls 
  • Pack of 6 portobello mushrooms
  • 1 large onion
  • 1/2 yellow bell pepper 
  • 1/2 orange bell pepper
  • 1 1/2tsp tony's cajun seasoning 
  • 1/2tsp thyme
  • 1/2tsp ground oregano 
  • 2tbsp chicken broth
  • 5tbsp butter
  • Provolone cheese
  • Pesto


  • Wash the portobellos 
  • Slice them up about 1/2 inch thick
  • Slice the bell peppers and onions the same way


  • Melt the butter and add the onions 
  • Cook for about 5-10 minutes, until translucent 
  • Add the mushrooms and cook them down for about 5-10 mins
  • Add the bell pepper and cook another 5 minutes
  • Add all seasonings and adjust to taste


  • Lay out your sandwiches
  • Spread mayonnaise on each side of the roll
  • Put 1/2 tbsp of pesto on each side of the roll
  • Place one piece of provolone on the roll
  • Put a heaping spoon of mixture on the roll
  • Put on a panini press or toast in oven
