strawberry bread with vanilla cream drizzle

When I started working on these, I was attempting to make scones. Well, obviously that didn't work out for me! It turned into a happy accident, though. I enjoy it like a coffee cake. It is a sweet treat that you can have for breakfast or dessert. 


  • 2 cups all-purpose flour
  • 1 cup sugar
  • 3 tsp lemon zest
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp cold butter cubed
  • 1.5 cups fresh chopped strawberries
  • 3/4 cups buttermilk
  • 1 large beaten egg
  • 1/4 cup reserved sugar


  • Preheat oven to 375
  • Spray 12 inch skillet or use a seasoned cast iron
  • In a large bowl combine flour, sugar, lemon zest, baking powder, baking soda and salt
  • Mix
  • Add cubed cold butter and cut with a pastry cutter or use a food processor
  • Shape dough into a circle about 2 inches thick
  • Cut into 8 triangles
  • Arrange it in skillet slightly apart
  • Brush with beaten egg and sprinkle with sugar
  • Bake until golden- about 25-30 mins
