strawberry pecan muffins

Ingredients:  Makes 12 muffins
1/2 cup softened butter
1 cup packed brown sugar
1/2 cup white granulated sugar
2 large eggs
2 tsp vanilla extract
2.5 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 cup cubed strawberries + 1/2 cup for topping (Macerated is best)
1/2 cup chopped pecans + 1/2 cup for topping
Sugar for topping

Preheat oven to 350
Line your muffin tin
In a mixing bowl, mix the butter, brown sugar and granulated sugar
Mix on medium until fluffy, scrape the sides of the bowl
Add eggs one at a time and beat well
Add vanilla
In a medium bowl mix flour, baking soda, baking powder, and salt
Slowly add in dry ingredients while mixing on low and alternate between flour mixture and buttermilk, ending with the flour mixture
Fold in 1 cup of chopped strawberries and 1 cup pecans
Scoop in the muffin cups
Bake for about 10 minutes
Take out and add sugar to the top, about 1/4-1/2 tsp each muffin
Bake for about 20-25 more minutes
Let them cool in the pan
