Growing up, my dad loved going fishing and crabbing.  When my brother and I got older, we would help him put out crab traps in the water and then help him get them when the time was ready.  Although the choppy water would make me a bit sick, especially when we would have to circle the traps, I still loved going.  It was fun seeing my dad do that type of thing and be able to enjoy it with him.  This was a time in my life when I actually enjoyed being out in the sun! Not so much anymore, ha! 
Silly me, I didn't enjoy crab in those days.  Back then when he boiled them, I would skip out on that part, however, when he had so many that he had extra to make crab cakes, I was totally game for that! He made the best and I think I am getting close.

Ingredients: 
Crab Cakes: 
1 lb lump crab meat-  picked over for shells
1 cup diced onions
1/2 cup diced celery
1/2 cup diced green bell pepper
1 tsp garlic powder
2 tbsp butter
3 tbsp lemon juice
2 tsp slap ya mama seasoning
1/2 tsp cayenne pepper
3 dashes worcestershire sauce
1/4 cup parmesan cheese
3 tbsp creole mustard
1/2 cup mayonnaise
3/4 cups italian breadcrumbs
Egg wash: 
1 egg
1 tsp slap ya mama
Breading: 
1 cup italian bread crumbs
1 tsp slap ya mama
Frying: 
Oil

Directions: 
Heat 2 tbsp butter in a skillet
Sauté down the onions, bell pepper and celery until softened
Seasoning with 1 tsp slap ya mama
Remove from the heat and set aside
Mix all other ingredients in a separate bowl
Test seasonings and adjust to taste

Place about 4 tbsp oil in a skillet

Mix 1 egg and 1 tsp slap ya mama in a separate bowl

Mix 1 cup of italian breadcrumbs with 1 tsp slap ya mama

With the crab mixture, make cakes to desired size
Dip them in the egg mixture
Dip them in the breadcrumb mixture
Place in heated oil
Fry until golden on each side
