apricot Oat bars

Do you love Nutri-Grain bars? We do! They are so easy to grab and go when you need a super fast breakfast but also need to hit the road. I wanted to come up with an easy version I could throw together at home that would be allergy friendly for us.
They are so delicious and we all love them more than the original ones! 


Ingredients: 

  • 1.5 cups Old Fashion Oats
  • 1.5 cups flour
  • 1 cup brown sugar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp wheat germ
  • 1 tsp ground flax seed
  • 1 tsp vanilla extract
  • 1 cup butter
  • 1 jar of Apricot preserves


Directions: 

  • Beat butter and sugar in a mixer until fluffy and light
  • In a bowl, mix flour, oats, salt, wheat germ, flax and stir it
  • With the mixer on low, add the mixture to the butter mixture
  • Add vanilla
  • Mix until combined
  • Heat oven to 350
  • Spread half the mixture in a 11x13 pan
  • Spread the jar of apricot preserves on top, you may not use all the jar- I use about 1/2-3/4 the jar
  • Take your time putting the other half on top of the preserves
  • My honest way:
  • Take a spoon full and put it in your palm
  • Flatten it out and put it on top of the preserves
  • I do that in sections then fill in the holes with mixture
  • I like the entire top covered, like a nutri-grain bar
  • Bake for 30-40 minutes until golden and crispy on top
