buttermilk biscuits

Buttermilk Biscuits are gold down here. But specifically, you will here people talk about a Popeye’s biscuit.
I found these in Taste of Home many moons ago. You’ll find the same recipe a thousand times online, it’s nothing new, nothing innovative that you haven’t seen before… But it is definitely a reminder to make them because they are just that good!

1/2 cup cold butter, cubed
2 cups self rising flour
3/4 cups buttermilk
Melted butter

-self rising flour matters, don’t sub out!
-real buttermilk matters. I know it is something we have to buy that might not be typical, but plan ahead and buy it because when you make your own it does come out different, I promise!

Preheat oven to 425F
In a large bowl cut the butter into the flour until it is small pea size crumbs
Stir in the buttermilk until all incorporated
Turn onto a lightly floured surface
Knead it about 3 times
Roll out where it is about 1 inch thick
Cut with desired size biscuit cutter
Placed on a greased baking sheet
Bake for 12-14 minutes
Brush tops with melted butter and serve!
