French Toast Casserole

A super simple recipe that is so tasty it seems as though you've spent all morning working on it. You can get it ready the night before, and to me that is the best part! It does take 30-40 minutes to cook, but that's really the only part you need to plan for.

Ingredients: (6-8 servings)

  • 6.5oz french bread, cut into cubes
  • 4 eggs
  • 1.5 cups heavy cream
  • 1/2 cup milk
  • 1.5 tbsp brown sugar
  • 1 tbsp vanilla

Mix all ingredients in a bowl.  Get your pan that you will bake it in ready (Fits great in a 9X5).  Lightly butter it or spray with a non stick spray. Pour the bread mixture into the pan and cover, refrigerate overnight.

Pecan Sauce

When you wake up in the morning, take your pan out of the fridge.  You can make your sauce now (if you didn't the night before).

Ingredients:

  • 1 stick of butter
  • 1/2cup pecans chopped
  • 1/2 cup brown sugar
  • 1tbsp corn syrup
  • 1/2tsp cinnamon
  • 1/2tsp vanilla

Directions:

  • Melt the stick of butter in a saucepan
  • Add all the other ingredients and mix
  • Pour on top of casserole

Bake casserole for 30-40 minutes on 350.

Sprinkle powder sugar on top if desired.
