pecan banana bread

The smell y'all. It will fill your house. It will make everyone swoon while it is cooking. The aroma is hypnotizing. I love this bread, it never fails that it will be moist. Not only moist, but it is an easy bread to make which is always a winner in my book! 

Ingredients: 

  • 3 extra ripe bananas

  • 2 large eggs

  • 1 1/4 cup brown sugar (packed)

  • 3/4 cup vegetable oil

  • 1/2 cup sour cream

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 3 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 cup chopped pecans

  • 1 3/4 cups flour

  • 1 tbsp ground flax *optional*

Directions: 

  • Spray a 6x9 bread loaf pan

  • In a large mixing bowl, combine the eggs, sugar, oil and sour cream

  • Whisk until smooth

  • Mash the bananas with hands or in a separate bowl

  • Add to the mixer along with cinnamon, baking soda, baking powder, vanilla, salt and pecans

  • Add flour and stir until combined

  • Pour the batter into the pan

  • Bake for about an hour- may take up to 1 hour and 15 minutes, depending on your oven.
