Honey Brined and grilled pork chops with pepper jelly

Hello and welcome to pork heaven. Please buckle up as these big babies require a little time because they will soak in a brine. It is well worth it to get them tender and of course let them soak up the flavor.
They get seared on the grill, each side, then put in the oven where the honey will work some sort of magic. They will become a pork chop god in the oven.

  • Ingredients:

  • 3 lbs thick cut pork chops

  • Brine:

    • 2 cups honey

    • 1 cup salt

    • 1/2 cup slap ya mama

    • water

  • Bulldog Pepper Jelly (roasted garlic)

  • Slap ya mama original blend cajun seasoning

  • Directions:

  • In a small sauce pan place about 2 cups of water

  • Add the slap ya mama, salt and honey

  • Stir to combine and bring it to a boil

  • Remove from the heat and pour into the container you will soak your pork chops in

  • Add some cold water, but not too much since you still have to place your pork chops in

  • Once the liquid is all cooled, place pork chops in it

  • Cover and place in the fridge for at least 3 hours, best if you let it soak overnight

    Cooking:

  • Start by heating your grill

  • Heat oven to 350

  • Line a sheet pan with foil and lay out your pork chops

  • Make sure to pat them dry

  • Sprinkle each side with slap ya mama original seasoning

  • Using your grill, sear them on each side

  • Once they have a good sear, bring them inside to go into the oven

  • On a lined sheet pan, place them in the oven and cook for about 25-30 until internal temp reads that it is cooked through

  • Once cooked, take them out of the oven and tent them with foil

  • In a small saucepan warm up the pepper jelly

  • It will melt, brush on top of each pork chop

  • Serve!
