A taco is a taco is a taco. Never!
I love Mexican food. Oh man, love it. This is my failed attempt at Al Pastor Tacos. They aren't Al Pastor, probably because I'm not Mexican and I just really don't know what the heck I'm doing!
But they are dang good, so that's the reason I'll be sharing them with you!
Enjoy!
Ingredients:
1 lb pork cut up
2 tbsp chili powder
1 tbsp garlic powder
1 tbsp oregano
1 tbsp cumin powder
3 tbsp Achihote Paste
1 tbsp Guajillo Chilie
Diced red onions
Avocado
Pineapple chunks
Salsa verde
Tortillas (Your choice, corn or flour)
Cilantro if desired

Directions:
Place all in a bowl to soak for about an hour
Pour all ingredients into a sauce pan
Allow to simmer down until cooked and tender
Keep enough water to just cover the pork so it won't stick or burn

Serve on a tortilla with onions, pineapple, avocado and some salsa verde!
