Zesty lemon pork chop

Lemon zest... it's so fabulous! Such a simple thing to add to a dish to give it a lift in flavor. 

8 thin sliced pork chops
3 large eggs- scrambled
1 cup Italian bread crumbs
Zest of 1 lemon
Slap Ya Mama Cajun seasoning
Oil for frying

In a bowl, crack eggs and scramble
In a second bowl mix Italian bread crumbs and zest of 1 lemon
Sprinkle each side of pork chop lightly with cajun seasoning
Dip in egg
Dip in breadcrumb mixture
Place in hot oil and cook until done on each side
