So! I won’t give you too much back story on this one because I have some things to explain about the actual cake.

I’m so crazy about my little girl. She is so sweet, so funny, and an absolute firecracker. Okay! So the cake. This cake had to be perfect y’all.

I was not going to have a cake that just wasn’t everything she wanted. So, originally I only wanted to make it 2 layers. She was excited for that. Well the first batch stuck, so it fell apart. I was not going to waste this batter because it was just too good, so I saved one crumbled layer and made cake balls with it. The other layer that fell apart, I cut it up and used it. So that’s why this cake is made for four 8” cake pans, but you’re really going to only use three. I’m sorry… Sorta… I think you’ll love it so much that you won’t mind that you have an extra layer to do whatever you want with! You can crumble it up and have two crumble layers, you can make cake balls too, or you can do like my husband did before I made the cake balls and just eat it on whatever you can! haha. Anyways. This really is my favorite now. The best thing ever happened, Ellie told me that this cake was exactly how she dreamed it. To me, there is nothing else she could have said that would have been better!

Tools:
Sauce Pan
Mixer
8” cake pans (4 if you have them, otherwise you can bake two at a time)
Ingredients:
4 sticks softened butter
4 cups sugar
6 cups unbleached cake flour
6 tsp baking powder
1.5 tsp salt
2 tsp lemon zest
2 tbsp lemon juice
8 eggs
6 cups unbleached cake flour
2 tbsp vanilla extract
Sauce:
2 cups blueberry
2 tbsp sugar
1 tbsp lemon juice
Directions:
Make the sauce first and you can set it aside
In a small sauce pan, place clean berries, sugar and lemon juice
Bring to a boil and allow it all to make a semi thick mixture
Set aside
Make the batter:
Preheat oven to 350
Lightly grease pans
In your mixer, beat together butter and sugar
Add baking powder, salt and vanilla, beat until pale a fluffy 3-5 mins
Add eggs, 2 at a time until thickened
Scrape the side of the bowl after they are fully incorporated
Mix in half flour and milk
Add the rest of the flour and combine
Pour batter into the prepared pans

Bake for 38-45 minutes (tooth pick should come out clean)Cool for 15 minutes, loosen edges with a knife and flip it onto a cooling rack)

Putting the cake together:

½ blueberry sauce
Crumbled pieces of cake
½ blueberry sauce
Buttercream icing on top(thick) It will help hold everything in place
Cake two
Now place buttercream on top and start working your way down
