Peach hand pies

Makes about 20 small pies

Dough:
2 cups flour (All purpose)
3 tsp confectioners sugar
Pinch of salt
4 tbsp unsalted butter (cubed)
4 tbsp shortening
1/2 cup ice water
Filling:
4.5 cups peaches diced
1/2 stick butter
1 packed cup brown sugar
2 tsp vanilla
Pinch of salt
Directions:
Let’s start with the dough so we can refrigerate it while we make the filling!
Measure you water and put it in the freezer for a few minutes until you need it
Place flour, sugar, salt in a large bowl
Cube up your butter, throw it in!
Measure out the shortening and throw it in as well!
Cut it all in with a pastry cutter or knife
You will want it to look like you have little balls of peas in your flour
Now we will add the ice water
Slowly add it, like a tablespoon at a time
Cut it in with the pastry cutter or your hands, I like to use my cutter because I’m always hot and I don’t want to melt the butter!
Once your water is incorporated into the dough now you will you use hands (it’s quick and shouldn’t melt anything too much!)
Press around the dough making it form into a ball
Split that ball in half
Wrap each ball in cling wrap
Place in the fridge and let them chill out

Filling:
Place peaches, butter and sugar into a large sauce pan
Turn the heat on medium high
Bring mixture to a soft boil and stir around constantly
Allow it to cook down for about 8-10 minutes
Mash your peaches if they haven’t broken apart while cooking (I like to mash mine no matter what)
Add the salt and vanilla and remove from the heat
Allow it to cool

Putting them together:
I keep my dough in the fridge for about 2 hours
Take one ball out at a time so the other one stays cool
I then take that ball and break it in half just for easy rolling
Flour each side of the ball and your rolling surface
Roll it out thin, but not so thin it falls apart
Cut with a large biscuit cutter or empanada press
Remove excess dough around the cut circles
Place an overfilled tablespoon of filling on one side of the side
Fold over and seal with a fork or any other special sealing tool you may have

Frying:
Heat oil to 325-350
Place sealed pies into the hot oil, one at a time and carefully
Fry until golden on each side
Take them out of the oil and allow them to drain on a wire rack or paper towel lined plate
Once they are cooled off, sprinkle powder sugar! Just a little, or go crazy with Joy!

Bring them to a boil, smash them up at the end.

Let’s make dough!

Cut in your butter and shortening.

Slowly add the ice water to bring it together.

Make them into two balls and wrap!

Roll and cut.

Time for the good stuff! Fill ‘em up!

Prepare to fry. Bring your oil to 325-350F.

Sprinkle with confectioners sugar and enjoy!
