So, most of the time I am a planner.
Some nights though I find myself stumped what to cook.
One night, I had chicken thighs pulled out of the freezer, as I knew I wanted to cook something with them. If I'm being completely honest, it was mainly because I needed to cook for my dogs and it was a really large chicken pack that I thought could feed them and us. **Insert laughing emoji**
I know.
Those crazy dog people. What's a girl to do?
So anyways, I had chicken and what else? Cherries, of course! We love cherries and if they are out in the grocery, you bet your butt they are in my fridge. It was much too late to be testing recipes, but that's what ended up happening and this baby was born!

Ingredients:
6 boneless skinless chicken thighs
1/4 cup olive oil
1.5 cup sliced onions
1.5 cup chopped cherries
1/4 cup balsamic vinegar
1 tbsp honey
1 lemon
1/2 tsp ground thyme
slap ya mama

Directions:
Place the oil in a large skillet on medium high heat
Sprinkle Slap Ya Mama on each side of the chicken
Fry in the hot oil, flipping half way through until cooked through
Remove chicken and set aside
Add onions to the hot pan and cook until translucent
Add cherries
Add balsamic vinegar
Add thyme, honey and juice of one lemon
Cook down for a few minutes until thickened
Pour ontop of chicken and serve
