Mother's faux hog head cheese

This is a great way for people who don't want to eat "hog head" in this appetizer.  It is still full of flavors that are right on point!


  • 1 small pork roast stuffed with garlic (2 cups of chopped pork)
  • 1 small beef roast (rump) stuffed with garlic (2 cups chopped beef)
  • Salt and pepper roast and cover with foil 
  • Bake them in the oven until meat is very tender and breaks apart 
  • Break meat apart in small pieces and set aside 
  • 1/2 cup chopped parsley 
  • 1/2 cup chopped green onions with tops 
  • 6 envelopes of knox unflavored gelatin 
  • 3 small loaf pans greased prepared and set aside
  • 3 cups of chicken broth
  • 1 to 3 tsp cayenne  
  • 1/2 tsp black pepper 
  • 2 1/2 tsp salt 
  • 1 finely chopped onion 
  • 3 bay leaves 
  • Cook the 6 ingredients above for 5 minutes or until mixture comes to a boil 
  • Add the gelatin and stir until it is completely dissolved 
  • Add chopped parsley and shallots and stir 
  • Add chopped pork and beef 
  • Pour into greased loaf pans and cover  
  • Refrigerate for a few hours before serving
