Stuffed Artichokes in the InstantPot
This is another recipe I never thought I would make until I met my husband! His family is all about stuffed artichokes. I've never gotten their specific recipes, but I've tried many and this is my adaptation of how we like them. I love them full of garlic and cheese. Yum! Makes a great appetizer for Italian night or pizza night at your house. Give it a go!
Ingredients: 
- 2-3 large artichokes or 4 small/medium 
- 1/4 cup ricotta cheese 
- 1/4 italian breadcrumbs 
- 2 cups parmesan grated finely 
- 2 tsp pepper 
- 2 tbsp garlic powder 
- Olive oil to drizzle on top 
- Lemon to squeeze on top 
- 1 1/2 cups water for the pot 
- 8 cloves of garlic chopped up to go in the bottom of the pot 
Directions: 
- Mix together the cheese and seasonings- use your hands! It will mix it better than a spoon will 
- Spread out the artichokes and stuff as much as you can on each leaf 
- Put 1 1/2 cups water in your Instant Pot and put the trivet inside 
- Place the artichokes close together 
- Close the lid and seal it 
- Use the manual cooking mode and put it on high pressure for 20 minutes 
- You will have tender, soft artichokes- if you like them a little firmer, don't cook as long
