I love instagram for the sheer fact I have seen so many different types of food from all over the world! When you make a new friend from a different country and follow them, you get to see new dishes you've never even heard of. Take this Turkish Pide for instance. I knew it looked like bread with filling but never heard of it before. You can make all sorts of different fillings, obviously.  It's almost like a pizza, but the filling is thicker and the dough wraps a little more. I love it! It makes for a great appetizer. 

Dough: 

  • 1/2 cup lukewarm water
  • 1/2 cup lukewarm milk
  • 2.5 cups flour
  • 2 tsp active dry yeast
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 egg mixed with 1 tbsp water to brush on dough before baking

Filling: 

  • 1 bag of chopped spinach 
  • 4 tbsp butter 
  • 1/2 tsp salt 
  • 1 tbsp slap ya mama 
  • 1 tbsp garlic powder 
  • 15 oz ricotta cheese 
  • Feta if desired

Directions: 

Heat oven to 350
Prepare dough by using a stand mixer with a dough hook
Place flour in stand mixer
Add sugar and salt
Mix up
Place water and milk in a bowl or large measuring cup
Add yeast
After about 5 minutes when it foams up, pour into flour and start mixing dough
Mix until well combined and dough pulls away from the bowl

Make filling: 
Melt butter in a pan
Add spinach and start sautéing it down
Add salt, slap ya mama and garlic
Cook until liquid is absorbed
Turn off heat and let it cool
Add ricotta cheese to it
Add feta if desired

Roll your dough out to about 1/2 inch thick
Place filling in middle
Brings edges up and "wrap" it around the filling
Use egg wash to brush the exposed crust  
Bake for about 25-30 minutes until golden
