Baked Rigatoni with Meatballs

Well how did this happen?  I ran out of lasagna noodles!! The tragedy that caused? None.  Because I always have some sort of noodle in this house.  I ended up taking out spaghetti and meatballs that I had in the freezer, and didn't realize it had meatballs in it.  So, here goes the rigatoni and meatball baked like lasagna.  It is really good. Has the layers of lasagna and hearty rich sauce.  Total heaven and a good switch up for Italian night. 

Ingredients: 

  • 1 lb Rigatoni noodles
  • 3lb of Ricotta cheese minus 1/4 cup (You may have some left over!) 
  • 2 eggs
  • About 6-8 cups of Spaghetti and Meatballs  

Directions: 

Layer! 

  • Put some of the Spaghetti sauce on the bottom of the pan 
  • Put a layer of noodles
  • Layer of ricotta 
  • Layer of sauce 
  • Layer of noodles
  • Layer of ricotta 
  • Layer of noodles 
  • Layer of sauce
  • Bake on 350 for 45 minutes to 1 hour
