crawfish fettuccine

This is a classic around these parts. It's in almost every restaurant you go to. Back in the day, when I didn't know much about food, but knew you couldn't mess up pasta (or so I thought at the time, wink wink)- this is what I would always get. 
I love spice and love pasta.  This dish brings both to the plate. Don't be scared of crawfish if you haven't tried them! Just be sure to buy the ones that aren't imported. 


Ingredients: 

  • 4 tbsp butter

  • 1/2 tsp slap ya mama cajun seasoning while cooking crawfish

  • 1 tsp slap ya mama cajun seasoning in sauce

  • 1 lb crawfish tails

  • 1/2 cup diced yellow onions

  • 1 tsp garlic powder

  • 1 tbsp worcestershire sauce

  • 2 cups heavy cream

  • 2 tbsp flour

  • 1 to 1.5 cups parmesan reggiano cheese

  • 1/2 cup green onions

  • 1 lb cooked fettuccini noodles

  • Salt and pepper to taste, if not using slap ya mama seasoning


Directions: 

  • Melt butter in a heavy bottom pan

  • Add the crawfish tails and onions

  • Add 1/2 tsp slap ya mama seasoning

  • Add flour on top and mix around

  • Add all seasonings and heavy cream

  • Bring to a boil and let it reduce down a little

  • Turn off heat and add cheese, mix around

  • Add noodles to the pan and combine well

  • Serve!
