Spaghetti and Meatballs 

An old classic that was oh so needed tonight. It's been a long week here y'all. My dad had open heart surgery and I've been at the hospital all week (along with our family). It's been four whole days since I've cooked for my family. I don't think any of us like to go out to eat that much. So, I was thinking  what would make them happy and also comforting and homey? 

This is it.

Ingredients:

Meatballs: 

  • 2lbs ground pork

  • 2lbs ground beef

  • 1/4 cup Italian bread crumbs

  • 1/4 cup heavy cream

  • 1 large egg beaten

  • 1/4tsp thyme

  • 2tsp ground oregano

  • 2tsp basil

  • 2tsp salt

  • 1tsp pepper

  • 2tsp parsley

Sauce: 

  • 3- 15oz cans of diced tomatoes

  • 2- 15oz tomato sauce

  • 1- 15oz can worth of water (more to desired consistency)

  • 1- 8oz can tomato paste

  • 2 cups diced onions

  • 1 cup diced celery

  • 1tsp parsley

  • 1tsp salt

  • 1/2tsp pepper

  • 4tsp ground oregano

  • 2tbsp basil

  • 2tbsp-1/4cup sugar (to taste- but I would start at 2tbsp and work your way up while tasting)

  • 2tbsp parmesan cheese

Meatballs: 

  • First, reserve about 1/2lb of the pork and the beef and set aside.

  • Put the rest of the pork and meat in a large bowl for mixing

  • Add all ingredients

  • Mix until combined (don't over mix so your meatballs will be tender)

  • Roll into sizes that you want your meatballs

  • Place on a cookie sheet and bake on 350 for about 25-30 minutes

  • Place in tomato sauce pot

Sauce: 

  • Take 1/2lb of the pork and the beef and place in your pan that you will make your sauce in

  • Start browning it and add your onions and celery

  • Add all other ingredients to the pot and cook down

  • Place meatballs in the pan and allow to simmer

  • Serve over your favorite pasta for spaghetti
