Sautéed Squash and Zucchini

One thing in Louisiana that we have an abundance of other than seafood, is squash and zucchini(I guess technically thats two things, but they are so close in the family, we will just call it one!).  I love that they are almost always available to us. One of my favorite ways to cook them is an old school classic.  Hope you saved your bacon grease from this morning! 


Ingredients: 

  • 2 zucchini 

  • 2 squash 

  • 2 tbsp bacon grease 

  • 1/2 stick butter 

  • 4 tbsp diced onion 

  • 2 tbsp diced garlic 

  • 1/2 tsp salt 

  • 1/2 tsp pepper 


Directions: 

  • Melt butter and grease in a large sauté pan. 

  • Add the zucchini and squash (sliced into coins) and cook down for a few minutes on medium heat (5-10 mins) 

  • Add the garlic and onions, cook for about 10 more minutes on medium-medium high. 

  • Add salt and pepper. 

  • I like to have some "seared" pieces, you may have to turn up your heat for this for just a few minutes to achieve that.
