pear MASCARPONE cake

This is an easy and beautiful little dessert to put together.  It looks so delicate and is soft and light. 
Add this to your menu when you have your friends over for brunch! 


  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup mascarpone
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1.5 cup flour
  • 5 tbsp cornstarch
  • 1 tbsp and 1 tsp baking powder
  • 3 tbsp canola oil
  • 1.5-2 cans of pears
  • Powdered sugar to sprinkle on top


  • In a mixer, mix sugar and eggs on medium high
  • When creamy, add mascarpone and blend until smooth and creamy
  • Add the extracts
  • It should be creamy, almost like pudding
  • In a medium bowl sift the flour, cornstarch, salt and baking powder together
  • Slowly fold the dry mixture into the wet ingredients until just combined
  • Add canola oil and 1/2 cup diced pears
  • Mix until combined
  • Pour batter into a cake pan or springform pan
  • Slice the rest of the pears thin and spread over top
  • Bake for about 35 minutes or until golden and toothpick comes out clean
  • Cool on wire rack
  • Sprinkle powdered sugar on top
