triple espresso crinkle cookies

Espresso? Chocolate? All in one cookie?! Sign me up!
I love these little babies y’all!
Ingredients:
1 cup dutch cocoa powder
1.5 cups granulated sugar
1/2 cup melted butter
4 eggs
2 cups flour
3 tsp espresso powder
2 tsp baking powder
1 cup confectioners sugar
Use your paddle attachment on a stand mixer
Add 1 cup cocoa powder, sugar, and butter
Mix until combined
Add the eggs one at a time
Mix well
In a small bowl add flour, espresso powder and baking powder
Add to the chocolate mixture and blend until just combined
Transfer dough to the fridge and let it chill out! (about 2-4 hours)

Heat oven to 350
Add confectioners sugar to a small bowl
Using a small ice cream scoop, scoop out some dough
Roll the ball in the confectioners sugar
Place on cookie sheet about 2 inches apart

Bake for 10 to 12 minutes.

Allow to cool on pan.
