Sometimes we just need a quick dinner y'all.  This is one that I like to do!  It's not much more work than throwing it in the oven to bake. It is light but still flavorful.

Ingredients:

  • 4 Chicken breast- cut in half
  • Salt
  • Slap ya mama cajun seasoning- 1/4tsp per side of each chicken breast
  • Big and Zesty Blackened creole seasoning- 1/4tsp per side of each chicken breast
  • Lemon juice
  • Olive Oil

Directions:

  • Squeeze the juice of 3 lemons into a bowl
  • Place your chicken in there to sit for 20 minutes- this helps make it tender and keep it moist
  • After 20 minutes, remove chicken from lemon juice and pat dry
  • Sprinkle each side of the chicken breast with salt
  • Sprinkle each side of the chicken breast with 1/4tsp Slap ya mama seasoning and Blackened creole seasoning
  • Put the Olive Oil in the pan, cover the bottom of your frying pan
  • Fry each side of the chicken until done (Tip: Fry the first side and don't flip until you see the top side turning white on the sides)
