bacon potato salad

It took me a long time to appreciate potato salad. I have only started enjoying it in the last few years.
I make a classic potato salad, but this one has bacon! Everything is better with bacon, right? It also doesn't have much yellow mustard. Try it as a side next time you want potato salad. 

Ingredients: 

• 3qt potatoes cubed up 
• 3qt water 
• 1 tbsp salt 
• 1 and 2/3 cup mayonnaise 
• 2 tbsp Dijon mustard 
• 3/4 tsp cayenne pepper 
• 1/2 cup finely chopped celery 
• 1/4 cup chopped green onions 
• 3 tbsp chopped fresh parsley 
• 2 hard boiled eggs 
• 5-6 strips of crispy bacon, crumbled 

Directions: 

• Boil potatoes in water with 1 tbsp salt 
• In a large bowl, add all ingredients together 
• When potatoes have completely cooled, add the the mixture 
• Mix well
