roasted rainbow carrots


I am not usually a fan of carrots… until now. Y’all, this simply blew my mind. And when I say simply, I mean it’s such a simple dish that just packs on the flavor but keeps it natural. How’s that even possible? I’ll keep testing to let you know! Ha.

1 tsp salt
1 tsp pepper
1/4 tsp ground thyme
1/2 tsp parsley
Squeeze lemon evenly on top
Place oven on 425
Roast for about 30-45 minutes (this will depend on the size of the carrots, mine were rather large)
Flip half way through
Cook until tender
