Bourbon sweet potatoes


Bourbon… do you drink it? I can’t drink it very well. But I can eat it! Ha. I love when I go places and they have it in a dish. The burn is almost unbearable for me to drink it though! It is one of my favorite dishes to serve with a grilled piece of meat.
So happy compromise, let’s just eat it!
6 cups sweet potatoes
1 and 1/4 cup heavy cream
1 cup brown sugar
2 tbsp molasses
1/3 cup Bourbon
Place sweet potatoes on a baking sheet
Poke holes and bake on 350 until sweet syrup oozes out of them
Let them cool
Scoop out the sweet potatoes discarding the skin
In a large pan, place the heavy cream, brown sugar, molasses and bourbon
Heat on medium high and allow it to come to a boil
Turn heat down
Add sweet potatoes
Cook until mixed well and heated through
